My One Skillet Mediterranean Chicken with Olives and Tomatoes is a real favorite dinner dish with all my family.
This low carb/keto chicken dish comprises boneless chicken breasts, poached in a chicken broth and topped with tomatoes, olives, onion, avocado and feta cheese.
Cooking keto chicken in a cast iron skillet could not be any easier and this is one of those Easy Mediterranean Chicken Recipes for Beginners.
It only takes 10 minutes to prepare and 20 minutes to cook. Making this 30 minute Mediterranean Skillet Dinner ideal for busy week nights.
What is Mediterranean Chicken made of?
My Mediterranean Chicken Skillet is made by searing chicken breasts in a cast skillet, before poaching them lightly in chicken stock and lemon juice. The chicken breasts are coated in some dried Mediterranean herbs, before being topped with olives, tomatoes and red onion.
How long does it take to brown chicken in a skillet?
I sear the chicken breasts for 3 minutes on each side. This is enough time to brown the chicken. I then poach the chicken in broth and lemon juice in the oven, keeping the chicken moist and stopping it from drying out.
How to make Low Carb Mediterranean Skillet Chicken:
- Preheat the oven to 375 degrees F.
- Place the chicken breasts on a cutting board and using a sharp knife, slice in half lengthwise.
- Sprinkle both sides of chicken with dried basil, dried parsley and season with salt and pepper.
- Now heat the olive oil in a cast iron skillet over a medium-high heat.
- Add the chicken and cook for 3 minutes on each side. Then transfer the chicken to a plate.
- Add the chicken broth, garlic and the juice of 1 lemon to the hot skillet.
- Allow the juices to simmer for 5 minutes and reduce a little, then turn off the heat.
- Now add the chicken back into the skillet.
- Place the chopped tomatoes, onions and olives on top of the chicken breasts.
- Now place the skillet into the preheated oven for 10 minutes.
- Remove the skillet from oven and add the chopped fresh avocado, crumbled feta and fresh parsley.
- Serve warm from the oven.
Low Carb Skillet Chicken ingredients & flavor variations:
- CHICKEN: I use 2 large chicken breasts sliced in half lengthwise, which is enough to serve 4 diners.
- OIL: I use olive oil to saute the chicken, however you can use any light flavored oil, like sunflower or rapeseed oil.
- CHICKEN BROTH: 1 cup of chicken broth is added to poach the chicken. You could also use a light vegetable broth.
- GARLIC: fresh garlic is minced and added to the poaching sauce.
- LEMON: the juice of one fresh lemon is added to the poaching sauce.
- HERBS: I sprinkle dried basil and parsley over the chicken breasts. You could also use dried thyme, oregano of Italian mixed herbs.
- VEGGIES: cherry tomatoes, black olives and red onion top the chicken. You can add any combination of veggies here, for example, diced bell peppers, zucchini or sliced mushrooms.
- CHEESE: once cooked I top the chicken with crumbled feta cheese, but you could also grate over some Parmesan or any other shredded cheese like cheddar.
- AVOCADO: diced avocado is added to the chicken before serving.
Flavor variations:
Brown the chicken breasts in the skillet then top with a variety of ingredients. Here are some ideas:
- Saute diced bacon and mushrooms along with the chicken then add heavy cream to the poaching sauce for a Keto Chicken Skillet with Creamy Mushroom Bacon Sauce.
- Top the sauted chicken with diced onion, bell peppers, tomato, garlic, jalapeno peppers and chili powder then add some shredded cheese. Then top with some sliced avocado and some more sliced jalapeno peppers to make a Mexican Chicken Skillet Keto dish.
- Add some tomatoes, garlic and wilted spinach to the top of the chicken and finish with a grating of fresh Parmesan cheese for a Tomato Spinach Chicken Skillet.
Serving suggestions:
To keep this dish low carb, I like to serve my chicken skillet breast with a dressed green salad.
However, if you have other diners not following a keto diet, you can always add some crusty bread to the table.
Recipe tips:
- Take care when removing the cast iron skillet from the oven. Always use oven gloves as the skillet gets seriously hot.
- This recipe serves 4 but can be easily doubled up if feeding a larger group of diners.
- This is a dish best served warm from the oven when the veggies are vibrant and still have a bit of bite. However, leftover chicken and veggies can be stored in an airtight container in the refrigerator for up to 3 days. When ready to enjoy, place in a hot oven until warmed through, taking care not to overcook and dry out he chicken.
