Homemade Tomato Soup is creamy and made with canned tomatoes, onions, garlic, dried basil, and oregano. This soup is an easy, made-from-scratch recipe. It’s a one-pot meal and is made in under one hour. This means getting dinner on the table just got a whole lot easier and, not to mention, tastier.

When the butter is melted, add the onion and garlic and sauté until tender, around 5 minutes

Tips for Success/Variations: 

  • You can use fresh, ripe tomatoes instead of canned tomatoes if you’d like. Roast them in the oven for an additional rich flavor. 
  • Fire-roasted tomatoes from a can are another great option for this soup. 
  • A yummy addition to tomato soup is cheese tortellini. 
  • Use an instant pot instead of a pot. Saute the onions and garlic, add the other ingredients, seal on the lid, and cook for 20 minutes. Carefully release the pressure, remove the lid, and serve immediately.  
  • It’s very easy to make this soup vegan, use vegetable broth and leave out the heavy cream.

How to Store:

Store the tomato soup in an air-tight container in the refrigerator for up to five days. 

You can also freeze it in quart-sized freezer bags with two cups of stew per bag. This will allow you to thaw only as much as you need and not the entire batch.

Ingredients

  • 2 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 28-ounce cans whole tomatoes
  • 1 cup water
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

OMGosh YUM! One of our favorite lunches during winter is tomato soup and grilled cheese sandwiches. Warms my heart just thinking about it.
