Green beans are a classic side dish that are perfect for a simple weeknight dinner, or a big holiday gathering. However, plain green beans are so boring and I struggle to get enthusiastic about them myself, never mind the kids!
So, tonight, take your dinner side up a notch by adding some bacon to your green beans. This easy recipe for roasted green beans combines the delicious snap of fresh green beans with the crispy crunch of cooked bacon.
The smoky bacon is cooked along with the green beans which takes the beans to another level in terms of flavor. Once you taste the two flavors together, you’ll never want to eat plain steamed green beans again.
Recipe ingredients
- GREEN BEANS: I always use fresh green beans as that’s where you find the best crunch. Frozen beans just don’t have the same snap or bite.
- OIL: Use a good quality olive oil as this will add to the flavor.
- SEASONING: I season the beans with salt, black pepper and garlic powder for added flavor.
- BACON: I use 5 strips of bacon, which I chop and scatter over the green beans to crisp up in the oven.
How to make Roasted Green Beans with Bacon
- Preheat oven to 350 degrees F.
- In a large bowl, add the green beans, olive oil, black pepper, salt, and garlic powder.
- Toss to cover the green beans in oil and seasoning.
- Spread the green beans evenly over a large baking sheet.
- Place pieces of bacon on top of the green beans.
- Place baking sheet in oven and roast for 30 minutes.
Flavor variations
- I’ve use green beans, however this recipe would work equally well with other green vegetables like broccoli, broccolini, asparagus or sugar snap peas.
- Use any variety or flavor of bacon: plain; smoked; maple cured.
- I seasoned the beans with salt, black pepper and garlic powder, but feel free to add some other herbs and spices, try Italian seasoning, smoked paprika, onion powder.
- Once the beans have roasted, add a squeeze of fresh lemon juice or some finely shredded lemon zest.
- Add some shredded Parmesan cheese.
What goes best with Green Beans?

Recipe hints & tips
- Always properly season green vegetables, it will make all the difference to the finished dish.
- Lay the green beans on the baking sheet in a single layer and don’t overcrowd the pan otherwise they will steam rather than roast.
- Use fresh green beans rather than frozen for the best texture and crunch.
- Add diced new potatoes or sweet potatoes to the baking sheet to make this a full meal.
- This recipe is easily doubled up if feeding a larger group of family and friends.
- If cooking for larger numbers I suggest using 2 baking sheets so that the pans are not overcrowded.

No, there is no need to blanch green beans before you roast them. Just wash and dry them and place on a baking sheet.
You can freeze leftover green beans in an airtight bag for up to 3 months to enjoy later. This is great if you want to have something prepared and don’t want to cook. However, once frozen and defrosted the green beans will loose their crispness, so will be soft once reheated.
On their own green beans can taste a little bland, so I like to add extra layers of flavor. Here are some ideas:
