Instant Pot Creamy Italian Chicken Pasta Casserole
Pasta is a favorite in our home. Nick is from Italian heritage, so it’s no surprise he and the boys really adore Italian meals. With three growing teenage boys in the house, I love utilizing pasta to stretch my grocery budget and fill up the bottomless stomachs! These boys can EAT! Since I got my new Instant Pot, I’ve been trying 1-2 new recipes each week to get a feel for it and get better at adapting my recipes to work with it. I always ask my crew if each recipe is a keeper or not, then make plans to share all of them that get their approval. They really enjoy eating Garlic Bread with pasta dishes, so I try to always serve some on the side with a small garden salad. The boys also enjoy taking leftovers (when we have them) to lunch at school. However, their school does not have a microwave to warm things up in. The workaround solution we’ve found is to heat the meal up at home in the morning, pour it into a Thermos, and it’ll be warm and ready to eat for them at lunch!
Instant Pot Creamy Italian Chicken Pasta Casserole Ingredients
Set Instant pot to sauté function. Add the garlic butter. When it begins to sizzle, add your chicken.
Brown chicken but do not cook all the way through.
If using the alfredo seasoning, add your milk to the mix and whisk together. Pour into Instant Pot. If you are using alfredo sauce from the jar, add that here.
Add roasted red peppers and pasta to instant pot.
Give everything a good stir.
Close lid and set instant pot to high pressure and set timer for 20 minutes. Make sure knob on top is turned to sealing. When timer beeps, allow pressure to decrease naturally for 15 minutes. Release remaining pressure by turning knob to venting.
Add spinach and cheese. Stir in and close lid. Wait about 10 minutes for the cheese to melt and spinach to wilt. Serve with some delicious crusty Italian bread!
- 2 tablespoons garlic butter
- 1 pound of chicken cut into bite sized pieces
- 1 package of McCormick Alfredo mix
- 1/2 cups of milk
- 3 cups chicken broth or stock
- 1 cup of roasted red peppers
- 2 cups of fresh spinach
- 8 ounces of your favorite dried pasta
- 1-2 cups of your favorite shredded cheese
