Crispy Buffalo Spiced Chicken
Are you the type who only goes to sporting events for Buffalo wings? We’re with you, and so we’ve taken the beloved dish from messy to epic weeknight dinner.
Instead of deep frying the chicken, I coat it in spicy seasoned breadcrumbs and roast it in the oven. Oven baked buffalo chicken is a lot less fuss, so perfect for those busy weeknight dinners, when we want something tasty on the table in minutes.
For this easy chicken recipe, I start by brushing the chicken breasts with sour cream. I then coat the chicken in a Buffalo-spiced panko mixture, before roasting to juicy, crunchy perfection in the oven.
If you’re using thin chicken cutlets, you can also turn this into a delicious Spiced Chicken Sandwich – it’s so good! We use this garlic basil mayo on the sandwich and it is divine.
While the chicken is roasting, I get on with making a spicy, creamy blue cheese sauce which is just perfect for dipping, or drizzling over the chicken. It would also be delicious with this Buffalo Chicken Dip Recipe for those of us who can’t get enough of Buffalo Chicken!

How to make Crispy Buffalo Spice Chicken
- Preheat the oven to 425 degrees F.
- Season the chicken with salt and pepper.
- Melt the butter and mix it with panko bread crumbs, Franks Red Hot Seasoning, and a pinch of salt & pepper.
- Place 1/4 cup sour cream in a small bowl (you can add more, if needed in next step).
- Brush a thin layer of sour cream on top of each chicken breast.
- Apply the panko bread crumb mixture to brushed side of each chicken breast to adhere.
- Place coated chicken breasts on a baking sheet that has been covered with aluminum foil and sprayed with nonstick cooking spray.
- Bake the chicken in the hot oven for 15-18 minutes until cooked through (to 165 degrees F or higher in the thickest part of the breast).
- While the chicken is baking, prepare the blue cheese sauce in a small bowl by combining the blue cheese dressing, scallions, and remaining sour cream.
- Serve the crispy chicken with blue cheese sauce, scallions, and additional hot sauce, if desired.
Cripsy Buffalo Spiced Chicken recipe ingredients
- CHICKEN: this recipe serves 6 so allow for 1 chicken breast per person.
- BUTTER: you can use salted or unsalted butter in the spice blend coating. If using salted butter just cut back a little on the salt when seasoning the chicken.
- BREADCRUMBS: I’ve used panko bread crumbs as they have a great crunch when cooked.
- SEASONING: I season the chicken with salt and black pepper, and I also add Franks Red Hot Seasoning Blend.
- CREAM: I use sour cream to coat the chicken.
Blue Cheese Sauce
- ONIONS: I use the green part of a bunch of scallions to add flavor to the blue cheese sauce.
- DRESSING: use your favorite brand of blue cheese dressing as the base for the sauce.
- SEASONING: I use Franks Red Hot Seasoning Blend to flavor the sauce.
- HOT SAUCE: I also add 2 teaspoons of Franks Red Hot Sauce to an extra kick of heat.
Flavor variations
- I used chicken breasts, but you could also use boneless and skinless chicken thighs, or chicken tenders, just ensure you adjust the cooking times accordingly.
- For an extra kick of chili heat, add some ground chili or red pepper flakes to the seasoning blend.
- Freshly chopped herbs, like parsley or cilantro, can be added to the seasoning blend.
- I’ve used Franks Red Hot Seasoning Blend along with Franks Red Hot Sauce in this recipe, however feel free to substitute with your favorite brand of spicy seasoning and hot sauce.
Serving suggestions
Along with the spicy Blue Cheese Sauce, I like to serve these crispy coated chicken breasts with potatoes and a couple of veggie sides. Roasted carrots and sour cream and scallion mashed potatoes on the side make this dish a slam dunk.

Recipe hints & tips
- Line the baking sheet with kitchen foil and spray with some oil, this will stop the chicken from sticking.
- Get ahead by preparing the blue cheese sauce earlier in the day. Then cover and place in the refrigerator, allowing the flavors to meld together.
- The easiest way to check that chicken is cooked through, is to use a meat probe thermometer. If you don’t have one, then insert a sharp knife into the thickest part of the chicken breast and the juices should run clear. If they are still pink, return to the oven for a few minutes more.

Yes, there is a spicy kick to buffalo chicken, but this is easily adapted to suit your own tastes. If you like your food on the mild side, but back on the seasoning and hot sauce in both the chicken and the blue cheese sauce. If you like it spicy then add a little more.
Once cooked and cooked, any leftover chicken, and also the blue cheese sauce, can be stored in an airtight container in the refrigerator for up to 3 days. Both the chicken and sauce are great leftovers for an easy lunch the next day, perfect in a salad or sandwich.
