Instant Pot Ground Beef Vegetable Soup

One of my favorite soup recipes is Instant Pot Ground Beef Vegetable Soup (also know as Hamburger Soup). I brown ground beef with onions and garlic, before adding potatoes, frozen vegetables, plenty seasoning and a good quality beef broth to produce a hearty soup that is not only nutritious, but packed full of savory flavor.

I’ve taken my old fashioned vegetable soup with ground beef recipe and played with it to get the timings right for cooking this delicious vegetable beef soup in my Instant Pot.

I love using my Instant Pot for cooking soups and stews as it really cuts down on cooking times and is a time saver, particularly for busy weeknight dinners.

My best ground beef vegetable soup recipes uses good quality ground beef and beef broth, which is really important to get the right depth of rich beefy flavor. However, for ease I use a package of mixed frozen vegetables in the soup, which saves a lot of preparation time, and the soup still tastes amazing.

As with all soups and stews, this is a great make ahead dish. In fact I’ll often make my easy ground beef vegetable soup the day before, then allow it to sit so that the flavors meld together. This results in a really savory and delicious bowl of soup.

Hamburger Soup Recipe ingredients

  • GROUND BEEF: I use 1 pound ground beef in this soup to serve 6.
  • FRESH VEGETABLES: I use onion, garlic and a medium potato in this soup.
  • FROZEN VEGETABLES: for easy I use a package of frozen mixed vegetables. Use any variety, my pack included green beans, corn, carrots, and peas.
  • BROTH: for the best flavor use a good quality beef broth.
  • SEASONING: I seasoned the soup with salt, pepper and Italian seasoning.

How to make Instant Pot Ground Beef & Vegetable Soup

  • Set the Instant Pot to sauté and add the ground beef with the onion.
  • When the beef is cooked through, add the garlic and cook an additional minute.

  • Turn off the Instant pot and stir in the potatoes and mixed vegetables.

  • Add in the beef broth and Italian seasoning.
  • Place the lid on the pot and seal the vent.
  • Set the pot to soup mode (20 minutes high pressure).
  • When the cook time is up, do a natural release for five minutes, then do a quick release to remove the rest of the pressure.

  • Season the soup with salt and pepper, as needed, before serving.

Flavor variations

This is a simple meat and vegetable broth based soup and as such is easily adapted:

  • Use any variety of vegetables in this veg laden soup. Try celery, pumpkin, butternut squash, zucchini, the options are endless.
  • Swap the potato for sweet potato.
  • Add a can of chopped tomatoes.
  • Stir through some fresh herbs like parsley, bay leaves or thyme to flavor the soup.
  • You can also garnish the soup with freshly chopped parsley.
  • Add a splash of Worcestershire sauce to add a depth of savory flavor.
  • Make a chicken and vegetable soup, by swapping the the ground beef for chicken and the beef broth for chicken broth.

Serving suggestion

Serve this easy hamburger soup with crusty bread, garlic bread, or a green salad. It’s a meal your whole family will love and I often serve this soup with my Sprite Biscuits.

You can also pair this hearty soup with a side dish like my Sheet Pan Roasted Broccoli, Roasted Green Beans, or Fried Okra.

Recipe hints & tips

  • When it comes to buying ground beef for soup, get the best quality you can find with an 80/20 lean-to-fat ratio. The fat is what provides the rich beef flavor, so this is a good ratio.
  • Get the Instant Pot nice and hot before your start sauteeing the beef, ensuring it browns rather than steams.
  • When it comes to soup, proper seasoning is essential. So taste the soup before you serve it and add more salt and pepper if you think it needs it.
  • Don’t have an Instant Pot, don’t worry. You can make this ground beef and vegetable soup on the stove-top. Use a large stockpot or Dutch oven and make the soup as detailed in the recipe card, getting the soup up to a boil. Then when you place the lid on the pot, turn the heat down to medium-low and simmer gently until the vegetables are cooked through and tender.

The trick to making a really tasty soup is to use a good quality broth and ensure that you season the soup properly with salt and black pepper. In this beef and vegetable soup I’ve also added some Italian seasoning to add extra depth of flavor. These two simple steps make a great difference to the end result.

How can I add extra flavor to soup?

The trick to adding extra flavor is to add it in layers. Use fresh herbs like parsley, bay and thyme to add extra layers of flavor to a broth based soup. You can also season the soup with a little acid using Worcestershire sauce or a splash of red wine vinegar. Or add a dried chipotle chili which will give the soup a mild smoky heat.

How long can you store Traditional Beef & Vegetable Soup?

Once cooked and cooled, store the soup in an airtight container in the refrigerator for up to 5 days. I often make the soup the day before, which allows the flavors to meld together and results in better tasting soup.

Can you freeze Hamburger Soup?

Yes, this is a great soup for freezing. Once the soup has cooked and cooled, place in an airtight container in the freezer for up to 3 months. When ready to enjoy, thaw and heat up until piping hot.
