Loaded Cream Cheese Corn

One of my all time favorite side dishes has to be this delicious Loaded Cream Cheese Corn recipe. I combine whole corn kernels with cream cheese, butter, ranch mix, and top it with shredded cheddar cheese, crispy bacon, sour cream and fresh green onion, for a side dish that it just an explosion of flavor.

Corn is one of my favorite vegetables to eat. Specifically sweet corn as it is so delicious.

I love finding it at the farmer’s market, freshly picked. I’ve always eaten it with just butter, salt, and pepper which is perfection and really lets the sweet corn sing. However, I always like to experiment with flavors.

We got an idea to make Loaded Street Corn one day and added some cheese & bacon. It was amazing. Then, I had some cream cheese on hand one day, and threw that in too, to use it up – UTTERLY DIVINE!

Toss in a little dry ranch dressing, and you’ll never want to eat plain ‘ole corn again – even though it’s pretty tasty on it’s own. My Loaded Sweet Corn recipe is next level!

How to make Loaded Cream Cheese Corn

Loaded Cream Cheese Corn
  • Start by draining your cans of corn and placing them in your skillet.

  • Add in your dry ranch mix.

  • Slice up your butter and cream cheese and add it to your skillet.
Loaded Cream Cheese Corn
  • Add in milk.
  • Cook on high until cream cheese and butter is melted.
  • Let sit to thicken.
  • Add in bacon and shredded cheese.
  • Top with sour cream and green onions if desired.

Recipe ingredients

  • CORN: I use 3 cans of Whole Kernel Corn which is enough to serve 8 diners.
  • CHEESE: Cream cheese is mixed through the loaded corn. I’ve used regular cream cheese, but you could swap this for a flavored cream cheese like garlic and herb. Then I use shredded cheddar cheese to top the loaded corn before serving.
  • BUTTER: I like to use salted butter for the added seasoning. If you use unsalted butter just check the seasoning.
  • MILK: I stir 1/2 a cup of whole milk.
  • SEASONING: I use a pack of dry Ranch Dressing mix to season the corn.
  • TOPPINGS: Along with the shredded cheddar cheese, I like to load on some crispy bacon bits, sour cream and chopped green onion for a real pop of flavor.

Flavor variations

  • Swap regular cream cheese for a flavored cream cheese, like garlic and herb.
  • I like to sprinkle over some shredded cheddar cheese, but Monterey jack, Parmesan, mozzarella or Gruyere cheese would work well too.
  • Play with the seasoning, I have used Ranch Dressing mix, but this same recipe would work with any other blend of spices or spice blends like Cajun seasoning, smoked paprika, etc.
  • Add some freshly chopped herbs like parsley or cilantro to the corn.
  • Stir through chopped jalapenos or red pepper flakes for a little spicy chili heat.

This delicious side dish is super versatile and can be served alongside so many main dishes. It works a treat with chicken, pork, beef or seafood. Try it with my Chicken Enchiladas, Garlic Butter Skillet Chicken, Oven Baked Chicken Fried Steak, my Oven Baked Pork Chops, and Oven Baked Salmon.

What toppings do you put on corn?

Whether its a whole head of corn, or corn kernels as I’ve used here, there are so many flavors that work with corn. Try it with a variety of cheeses, cotija, feta, parmesan, cheddar. Sprinkle over any variety of fresh herbs, including parley, cilantro and chives. Crispy up some bacon or finely diced chorizo and sprinkle that over. Make a garlic and herb butter and melt that over the corn. The list is endless so go experiment.

How do you spice up corn?

Corn has great flavor so works well and isn’t over-powered by spice. Spices like ground cumin, black pepper, smoked paprika, chili powder and even spice blends like Cajun seasoning, work a treat with corn. Add some fresh sliced red chili or some Jalapeno peppers. Sprinkle through some chili powder or red pepper flakes or drizzle over some Sriracha sauce or your favorite hot sauce.

How to store leftover loaded corn?

Leftover loaded corn can be stored in an airtight container in the refrigerator for 2-3 days. When ready to enjoy heat back up gently in a pot on the stove top or in the microwave.

Can you Freeze loaded corn?

I don’t recommend freezing loaded corn. This dish takes can be prepared, cooked and on the table in 15 minutes so is definitely a dish best served fresh.

Ingredients

  • 3 cans of Whole Kernel Corn
  • 8 oz. of Cream Cheese
  • 1 stick of Butter
  • 1/2 a cup of Milk
  • 1 packet of dry Ranch Mix
  • 1 Cup of Bacon crumbled

Instructions

Start by draining your cans of corn and placing them in your skillet.

Add in your dry ranch mix.
