One Pot Smoked Sausage with Potatoes & Green Beans is a dish I cook regularly, particularly when I’m busy and want something filling and nutritious for dinner. This one pan skillet meal combines smoky sausage, which I saute with potatoes, green beans, onion, garlic and just a pinch of chili heat!

One Pot Smoked Sausage with Potatoes and Green Beans

This skillet smoked sausage with potatoes is a great budget friendly dinner using simple ingredients that many of you will have in your refrigerators and stores at home.

When making this dish I like to leave the skin on the potatoes, not only does this save you time, it’s also a healthier option as potato skins are full of nutrients and lots of fiber.

I’ve added fresh trimmed green beans to my smoked sausage and potato skillet, however this is a versatile recipe so you can swap out the green beans for other veggies. Try making smoked sausage and potatoes with peppers and onions.

Recipe ingredients

  • OIL: I use olive oil to saute the sausage in this recipe. You can use any variety of light flavored oil.
  • SAUSAGE: I use fully cooked smoked sausage in this dish, which cuts down on the cooking time. If using raw smoked sausage I recommend cooking it first then slicing and following the recipe.
  • POTATO: you can use any variety of potato, my preference is baby red or Yukon gold potatoes, and I like to leave the skin on.
  • GREEN BEANS: I use a pound of fresh green beans which I trim. You can use frozen green beans or canned beans in a pinch, but just don’t cook them for quite so long so they retain a little bite.
  • ONION: I use a small yellow onion for flavor.
  • GARLIC: I use fresh garlic, although garlic puree can work in a pinch.
  • BROTH: I add chicken broth to this dish, you could also use vegetable broth.
  • SEASONING: to season the dish I add Italian seasoning, black pepper and sea salt. You could also add other ground spices like smoked paprika, cayenne pepper or swap the Italian seasoning for a Cajun seasoning blend.
  • CHILI: to add just a touch of heat to the dish, I add 1/2 teaspoon of red pepper flakes.

How to make One Pot Smoked Sausage with Potatoes

Heat one tablespoon of oil in a large skillet over medium heat and add the sliced sausage.

Cook for 5 to 10 minutes, until the sausage is lightly browned.

Remove the sausage from the pan and add the remaining 1 tablespoon of olive oil.

Toss in the potatoes, green beans, onion, garlic, chicken broth, Italian seasoning, black pepper, salt, and red pepper flakes.

Stir to mix.

Cover and cook for 10 to 15 minutes, stirring occasionally, then remove the lid from the pot and continue cooking for 5 to 10 minutes, until the potatoes are softened.

Add more oil to the pan if the vegetables begin to stick.

Add the sausage to the pan and stir to mix.

Cook 2 to 3 minutes, until the sausage is warmed through.

Flavor variations

  • SAUSAGE: I’ve used a fully cooked smoked sausage. If you use raw sausages I recommend cooking them completely first, before slicing them up for this recipe. Once the sausages have been cooked, simply follow the recipe.
  • POTATOES: I’ve used regular potatoes, but this recipe would also work with sweet potatoes, or swap the potato for some butternut squash or pumpkin.
  • VEGETABLES: Use any variety of vegetables in this dish, I’ve used green beans, but you could use asparagus, broccoli, bell pepper, zucchini, carrot, or a handful or two of green peas.
  • CHILI: You can adjust the chili heat in this dish by adding a little more or less red pepper flakes to suit your own palette. If you like your smoked sausage extra hot, you can add a sliced red chili or two to the dish along with the garlic.
  • GREENS: Add a handful of leafy greens like spinach, kale or chard towards the end of the cook and allow to wilt into the dish.
  • FRESH HERBS: Some finely chopped fresh herbs make a great addition to the dish. Try thyme leaves, parsley, basil or cilantro and cook along with the vegetables or add as a garnish at the end of the cook.

Serving suggestion

This is a hearty and filling dish where everything you need for a delicious meal is cooked in one pot. If adding anything else to the dish it would be vegetable based, a dressed green salad or some roasted vegetables, or a spoon of my Instant Pot Baked Beans.

Recipe hints & tips

  • This is a great prep ahead dish, save time by having all the ingredients cut to size beforehand. Then when ready to eat, all you need to do is pull everything together and cook the dish.
  • Cut the potatoes into similar bite sized pieces, this will help ensure they cook at the same time.
  • Use a good sized skillet so that everything has space to cook and crisp up, Using too small a skillet will result in overcrowding and the ingredients will steam rather than saute.
  • This recipe is easily doubled if you are feeding a larger group of diners.

FAQs

How to cook smoked sausage on stove tip?

I use pre-cooked smoked sausage in this recipe which cuts down on the cooking time. However, if you are using a raw smoked sausage I recommend cooking it first. Cook the sausages whole for 10-12 minutes until cooked through. Or to cut down on time you can slice the sausage first then cook the slices for 6-8 minutes until cooked through.

How to store leftover smoked sausage and potatoes?

Store leftovers in an airtight container in the refrigerator for 3-4 days. When ready to enjoy place back into the skillet and heat up on the stove until warmed through. Alternatively reheat in the microwave.

Can I freeze smoked sausage and potatoes?

Once cooked and cooled place in an airtight container and store in the freezer for up to 3 months. Defrost in the refrigerator when you are ready to serve.
