Easy Beef Stroganoff is a classic, comfort food recipe that is a cinch to make. I love that this recipe can be prepared on the stovetop, in a skillet, in just 30 minutes, a perfect weeknight meal.

What cut of beef is best for stroganoff?

When making beef stroganoff, you want to choose a tender, juicy cut of meat that is full of marbling.  Why marbled? The fat in the marbled cut will melt during cooking process, making the meat tender, moist, and retain its flavor.

Easy Beef StroganoffWhat is stroganoff sauce made of?

The Stroganoff Sauce in this recipe is a sour cream gravy made with beef broth then thickened with cream of mushroom soup. There is no need for flour, since you’re using homemade or store bought cream of mushroom. You CAN add flour if you’d like it thicker, more broth if you’d like it thinner, or additional mushrooms if you want them.

Heat the olive oil in a skillet over medium heat.

Add the sirloin and onion and sauté until the steak is cooked through.

Whisk together the cream of mushroom soup, sour cream, and beef broth.

Pour the mixture over the top of the steak and simmer until thickened, around 10 minutes.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound sirloin, cut into cubes
  • 1 small onion, chopped
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup beef broth
  • Egg noodles for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the sirloin and onion and sauté until the steak is cooked through.
  3. Whisk together the cream of mushroom soup, sour cream, and beef broth.
  4. Pour the mixture over the top of the steak and simmer until thickened, around 10 minutes.
  5. Serve over egg noodles.

Easy Beef Stroganoff

Ground Beef Stroganoff

Prefer to use ground beef? Simply brown ground beef until cooked through, then drain excess fat. Proceed through remaining steps of recipe.

Crockpot Beef Stroganoff

  • If time permits, sauté the beef in a skillet until just brown on all sides before adding to the Crock Pot. If not, it’s OK to place in uncooked, it just adds an additional layer of flavor.
  • Place beef in crockpot, add onions, beef broth, cream of mushroom soup
  • Cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours or until the beef is tender.
  • About 20 minutes before it’s done, add the sour cream to the slow cooker and stir to combine, heat through.
  • Serve over hot egg noodles.

Instant Pot Beef Stroganoff

  1. Set your 6-qt Instant Pot to the high sauté setting.
  2. Season your beef with salt & pepper, to taste.
  3. Heat olive oil
  4. Add beef and cook until evenly browned, about 3-4 minutes; set aside.
  5. Add onions.
  6. Cook, stirring occasionally, until tender, about 3-4 minutes.
  7. Whisk in cream of mushroom soup, about 1 minute.
  8. Stir in beef broth, and return beef to instant pot.
  9. Select manual setting; adjust pressure to high, and set time for 12 minutes.
  10. When finished cooking, quick-release pressure according to manufacturer’s directions.
  11. Stir in egg noodles.  
  12. Select manual setting; adjust pressure to high, and set time for 5 additional minutes.
  13. When finished cooking, quick-release pressure according to manufacturer’s directions.
  14. Stir in sour cream; season with salt and pepper, to taste.
  15. Serve immediately, garnished with parsley, if desired.

We prefer to eat it served over egg noodles, though other pastas, rice, or mashed potatoes (or cauliflower) would also work. 

What Herbs are Used in Beef Stroganoff?

When serving beef stroganoff you may want to add a pop of color to the brown dish. Feel free to add freshly diced herbs to the top of each plate when serving. I suggest parsley or thyme.

Beef Stroganoff Variations:

This classic beef stroganoff recipe is versatile and easily customized.

  • Add extra veggies: Feel free to add any other veggies that you love.  For example, asparagus, bell peppers, broccoli, cauliflower, peas, green beans, extra sliced onions, diced garlic, etc. would all be delicious additions.
  • Add extra heat: If you would like to give the sauce a bit of a kick, add in a pinch of crushed red pepper flakes or a couple of dashes of hot sauce.
  • Use a different protein: You can easily swap the beef in this recipe, it would also be delicious with chicken thighs or breasts, or pork chops.

Easy Beef StroganoffHow to Store Leftover Beef Stroganoff:

Store leftover beef stroganoff in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or oven, taking care not to overheat the beef, making it tough. 

Can you freeze Beef Stroganoff?

Yes you can!

I prefer to place in portioned containers that are freezer safe AND airtight. Take care to clearly label with the contents and date. Defrost in the refrigerator overnight, then heat in the oven or microwave, being careful not to overheat.
