Sheet Pan Steak & Potatoes

This easy Sheet Pan Steak & Potatoes bakes in under 45 minutes, perfect for busy weeknights when you need a simple recipe to serve your family. The sirloin steak will melt in your mouth, and the crispy potatoes complement perfectly!

Sheet Pan Steak & Potatoes is a simple meat and potatoes dinner.

I love sheet pan meals because they make for an easy cleanup!

My sheet pan was loaned out the day I prepared this, so I substituted my glass baking dish. Either works great!

Pre-pandemic we purchased all of our beef products at our local supermarket, H-E-B, the farmer’s market, or a close friend who owns a cattle farm. During the pandemic, I started using delivery services more and have been very pleased with the quality and prices of the products shipped to us. 

How to Bake Steaks in the Oven:

Sheet Pan Steak & Potatoes

Preheat the oven to 425 degrees.

Prepare a large (18×13 inch) rimmed baking sheet or pan with aluminum foil sprayed with nonstick cooking spray.

Mince 2 cloves of garlic.

Finely chop about 1 tablespoon (or 1 sprig) rosemary leaves.

Sheet Pan Steak & Potatoes

Drizzle the potatoes with 1 tablespoon olive oil and toss with the minced garlic, chopped rosemary, salt, and pepper.

Place the potatoes on the prepared sheet pan.

Bake for 25 to 30 minutes or until tender.

Meanwhile, salt and pepper the steaks on both sides.

Place the steaks in a shallow dish.

Peel and smash remaining garlic and place on top of the steaks.

Put the remaining sprig of rosemary between the steaks.

Drizzle the steaks with red wine vinegar and 1 tablespoon olive oil.

Cover the dish.

Allow to rest on the counter while the potatoes cook.

When the potatoes are cooked, create room in the middle of the sheet pan for the steaks. 

Set the oven to broil.

Place the sheet pan back in the oven and cook for 5 minutes.

Remove the baking sheet from the oven and flip the steaks.

Add the broccoli or green beans around the steaks and potatoes.

Return to the broiler and continue cooking for 5 to 6 minutes, depending on the desired doneness of the steak.

Remove the sheet pan from the oven.

Top steaks  with butter and allow to rest for 5 minutes before slicing.

What side dishes or additions work well with Sheet Pan Steak & Potatoes:

  • As you can see from this recipe, I paired it with potatoes and green beans.
  • Broccoli or Cauliflower would also work well, as would asparagus or carrots.
  • Adding onions to caramelize and add a deep, rich, delicious flavor.
  • Sliced mushrooms would elevate the flavors to another level.
  • Bell Peppers are a delight, or if you want some heat, add jalapenos!
  • When finished, sprinkle the top with the cheese of your choice (I prefer fresh thinly sliced Parmesan) for a decadent treat.

Ingredients

  • 1 ½ pounds baby yellow potatoes, cut in half lengthwise
  • 2 pounds green beans, trimmed
  • 3 tablespoons olive oil, divided
  • 1 tablespoon red wine vinegar
  • Salt and black pepper, to taste
  • 2 sprigs fresh rosemary
  • 5 to 6 cloves garlic, divided
  • 3 tablespoons butter
  • 2 to 3 boneless sirloin steaks, 3/4 to 1 inch thick (about 2 ½  pounds total)
