Orange Crush Cupcakes
All of my kids love to drink Orange Crush, but one in particular child is possibly the drinks biggest fan. He LOVES it, on another level, LOL.
I’ve used soda in cooking before, Sprite Biscuits are our favorite go-to biscuit, and my Brown Sugar and Coke Glazed Ham is a big hit too! So, I’ve been playing around with using soda in some other recipes.
After a few tries and adjustments, we’ve decided this Orange Crush Cupcakes Recipe is the best and the kids say, no more changes! I hope your family will enjoy the recipe as much as mine does!
To begin, gather all of your ingredients and measure them out.
Whisk together the flour, baking powder, and salt in a medium bowl, set aside.
Next, beat together butter and granulated sugar with a mixer on medium speed until combined.
Add eggs and beat well, scrape the bowl when necessary.
Reduce speed to low and gradually add flour mixture, beat until combined.
Add milk and the Orange Crush soda and beat until blended.
Use a batter scoop or an ice cream scoop and portion batter evenly into the cupcake tins.
Bake in the oven for 18 minutes or until a toothpick comes out clean.
When baked, set aside and let them cool while you prepare the icing.
In a mixer, using the whisk attachment, mix together sugar and butter.
Mix on low speed until blended and then increase speed to medium beat for 3 more minutes.
Add the Crush Soda and cream and continue to beat on medium speed for a few more minutes.
Add in more powder sugar if necessary.
To make dual color striped icing, split icing in two. Add a few drops of orange to one bowl of the icing.
Take a piping bag and a star tip. Fill one side of the piping bag with the orange colored icing and the other side with white icing and pipe onto the cupcakes.
To make solid color icing, just add the drops of orange food coloring to the main bowl. You can add as many or as few drops as you prefer. The more drops, the darker the orange coloring will be.
