Thin Mint Truffles
The guys in my house LOVE Girl Scout Cookie time, and we’re lucky that the daughter of one of our close friends is a girl scout. We’re probably the first call she makes because she knows we’ll place a good order to help support her troop. I have a few recipes that I like to make with Girl Scout Cookies, but I have to act fast to be able to use them before the boys gobble up the cookies. They do love the recipes I make with the cookies, but self-control is challenging for teenage boys when there are boxes of delicious cookies in the pantry;)

Thin Mint Truffles Ingredients
1 box Thin Mints Girl Scout Cookies
8 oz cream cheese – softened
12 oz Wilton vibrant green candy melts
12 oz Wilton dark green candy melts
Dark green jimmies sprinkles
Bright green jimmies sprinkles
To begin, line a large cookie sheet with wax or parchment paper and set aside. Place the Thin Mints cookies in a food processor and pulse into fine crumbs. Pour the crumbs into a medium mixing bowl.
Add the softened cream cheese. Mix well. (You may find it easier to just use your hands).
Cover and chill for 15 minutes for easier handling. Roll the chilled cookie mixture into 1 inch balls and place on the lined cookie sheet. Freeze for 10 minutes.
Melt about half a bag of each color of green candy melts in a double boiler or a Wilton melting pot. This makes a nice medium shade of green. For the double boiler, warm the candy melts under medium heat, stirring occasionally until melted and smooth. Dip each ball into the melted green chocolate (I used a toothpick and a spoon) and return to the lined cookie sheet.
Immediately sprinkle the truffle ball with the dark and light green jimmies. NOTE: The chocolate hardens fast because the truffles were in the freezer. I ended up dipping one truffle at a time and sprinkling it with jimmies before moving onto the next truffle.

Oh my goodness these are so beautiful! I would never have thought to use thin mint girl scout cookies like this. I’ll have to try making these next time the little girl scout comes to my door pushing cookies! My brothers would scarf them down in five minutes!

My problem would be the same as your boys!!! Those mint cookies are my favorite girl scout cookie and I don’t know if they would last long enough for me to make this recipe. This recipe does look like it would be very tasty!!!
