Homemade Chicken Noodle Soup
It’s officially winter here in New England, and it’s been COLD. Over the past few weeks, there have been a few viruses and infections going around the kids school, and they were kind enough to bring some home and share with us 🙂 Since we’ve been feeling yucky, Homemade Chicken Noodle Soup, Chicken and Rice Soup, Chicken and Dumplings, etc. have been frequently been on the menu. This Homemade Chicken Noodle Soup Recipe can be made a few different ways. When I’m feeling 100%, I tend to use fresh ingredients as much as possible. I let it simmer on the stovetop for several hours, and toss in the pasta when it’s close to complete. When I’m feeling ok, but in a rush, I use a mixture of fresh, frozen, canned ingredients and toss them into the slow cooker to simmer all day and be waiting on us at dinnertime. Rotisserie chicken can also be quickly de-boned and used in a pinch to save time! When I’m sick, I pretty much open some frozen vegetables and canned chicken, toss them into my Dutch Oven on the stove, and dinner is ready in 30 minutes.
Homemade Chicken Noodle Soup

Ingredients
- 2 Tbsp butter
- 1 cup chopped onion
- 1cup chopped celery
- 2 (32 ounce) boxes chicken broth
- 1 (14.5) can vegetable broth
- 2 cups chopped cooked chicken breast (Can use Rotisserie or Canned, if needed)
- 1 1/2 cups egg noodles
- 1 cup diced or sliced carrots
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- salt and pepper to taste
Instructions
In a large pot over medium heat, melt butter.
Cook onion, carrots, and celery in butter until just tender, 5 minutes.
Add Basil, Oregano, Salt, and Pepper
Pour in chicken and vegetable broths
Stir in chicken, then noodles
Bring to a boil
Reduce heat and simmer 20 minutes before serving.
Notes
If cooking in slow cooker, or letting soup simmer on stovetop, wait to add noodles until 20 minutes before serving time, so they don’t get mushy!
