Crock Pot White Bean & Turkey Chili

This White Bean & Turkey Chili is made in the Crock Pot and couldn’t be easier to make. Leftover roast turkey is combined with smoked bacon and white beans in a milder green chili sauce to make a delicious chili the whole family can enjoy. Even better this is a zero Weight Watchers points recipe!

Crock Pot White Bean & Turkey Chili

I like to make this white bean turkey chili in the slow cooker and then get on with the rest of my day, happy in the knowledge that there will be a tasty and nutritious dinner to look forward to at the end of it.

We all love roast turkey, however we always have lots of leftovers. My crock pot turkey breast recipe is a great way to use up leftovers. This is the dish I cook when my family gets tired of eating just plain turkey, or turkey and dressing.

This healthy white bean turkey chili is not only a great way of using up leftover turkey, but easy to prepare and cook as my own pantry is always stocked with a variety of canned beans. An added bonus is that my white bean turkey chili is Weight Watchers friendly too.

This recipe also tastes fantastic using Smoked Turkey Breast. The turkey is packed with flavor, thanks to the delicious dry rub that gives the turkey breast a crispy exterior – it would give so much flavor to the chili!

Recipe ingredients

  • TURKEY: I like to make this recipe using leftover roast turkey.
  • WHITE BEANS: I have used canned cannellini beans, not only do they taste great but they are really filling too.
  • CANNED CORN: adds flavor and crunch to the chili and pairs really well with the other flavors in this white bean and turkey chili.
  • GARLIC: adds a depth of flavor to the chili sauce.
  • ONION: adds flavor to the chili sauce, you can use yellow or white onion.
  • BACON: adds a base of flavor to the chili sauce, you can use either regular or smoked bacon, depending on what you have in the refrigerator.
  • CANNED GREEN SAUCE: Mexican green chili sauce adds the mild chili heat to this white chili. Green chili sauce is milder and not as hot and fiery as a red chili sauce so it balances out better with the turkey rather than overpowering it.
  • BROTH: you can use either turkey or chicken broth in this easy white chili.
  • SPICES: the chili is flavored with cayenne pepper and paprika which add a little spice, rather than a fiery heat that you would get from powdered chili.
  • DRIED HERBS: dried oregano and dried thyme add a burst of herbal flavor to the chili. Both of these herbs taste great with white meats like turkey and chicken.

How to make Crock Pot Turkey White Bean Chili

  • Place oil, bacon, onion and garlic in a large crock pot or slow cooker.
  • Cover and heat on high for approximately 10 minutes, until onions are translucent.
  • Add the beans, corn, turkey, green sauce, herbs and broth.
  • Stir well then cover the pot and cook on high for about 45 minutes to 1 hour (on low 2-3 hours).
  • Season to taste with spices, and then cover and allow to cook for 15 more minutes before serving.

How to make White Bean & Turkey Chili on the stove

If you don’t have a crock pot or slow cooker, no problem. This easy crock pot white bean and turkey chili can also be made on the stove top! Just add all the ingredients to your stockpot, bring to a boil, then turn down the heat to low and let it simmer away for 30-45 minutes until you are ready to serve!

Flavor variations

  • Don’t feel like you need to cook an entire turkey before you start cooking. You can use ground turkey instead, just make sure you brown it first before adding to the pot.
  • You can also substitute the cooked turkey for leftover roast chicken or use rotisserie chicken from your local store.
  • You could also substitute cannellini beans with other white beans like a lima beans.
  • Bacon adds flavor to the chili, if you don’t have bacon you could use smoked ham.
  • White chili is a milder chili, but you can spice it up with powdered chili if you like your chili on the hotter side.

Serving suggestions

My Crock Pot White Bean & Turkey Chili makes a great dinner any night of the week. It also makes a great potluck dinner with friends.

I like to serve mine as a thick and hearty soup with a side of crusty bread. You don’t need much more as this is such a filling and nutritious dish. Alternatively replace the crusty bread with some steamed rice instead. Finishing the chili with a spoon of sour cream on top just before serving.

Recipe hints & tips

  • If you don’t have any leftover turkey or chicken it’s worth checking your supermarket rotisserie counter. I’m lucky as my local supermarket has prepared turkey breast as well as whole chicken available at the rotisserie counter.
  • Check the chili for seasoning before serving as proper seasoning will make all the difference to the finished dish.
  • This is a great make ahead dish, cook the chili the day before and leave to sit overnight. This is a soup that will taste even better the next day once all the flavors have had a change to meld together and intensify.

This Crock Pot white bean and turkey chili is a great make ahead dish. Simply cook the chili and allow it to cool completely before placing it in a container with the fitted lid. Place the container in the fridge for up to 3 days until you are ready to serve.

When ready to enjoy place the white bean and turkey chili into a large pot and place on the stove over a medium/high heat and warm through until piping hot.

Can I freeze turkey white bean chili?

White bean and turkey chili can be easily frozen. Simply cook the chili and allow it to cool completely before spooning it into a container with a tight fitting lid, and placing in the freezer. This white bean chili will store for up to 3 months in the freezer.

When ready to eat defrost the chili thoroughly overnight in the refrigerator before warming up in a pot on the stove.

  • 1 Tablespoon olive oil
  • 1 Tablespoon minced garlic
