Easy Chicken Parmesan
My kids love to eat all the things, but pasta is their favorite thing to eat. They’re all in high school, and athletes, so I have to triple or quadruple most recipes in this phase of life.
It works out well that they love pasta SO MUCH, because I can buy it in bulk at our local Warehouse Club (Sam’s Club), and not break the budget. I try to plan the pasta meals around their game schedules so they can “carb load” the night before. Did I mention they can EACH eat over a pound of pasta? Yeah.
This Easy Chicken Parmesan recipe is for one pound of pasta, but I quadruple it and use four pounds of pasta. With no leftovers. I recently picked up some industrial sized pots at Sam’s Club, and stowed away my normal sized pots for use when we’re empty nesters, LOL 🙂
Preheat Oven to 350 degrees.
Prepare box of angel hair or spaghetti pasta, according to package directions.
Combine bread crumbs and parmesan cheese in small bowl.
Beat egg whites in another bowl.
Dip chicken in egg whites then coat with bread crumbs.
Lay chicken in a roasting pan and top with marinara sauce (I can and use a jar of my Homemade Sunday Sauce) and mozzarella cheese.
Bake for about 35 minutes.
Place single serving of cooked pasta on a plate.
Top with baked chicken breast
Serve and enjoy!

- 1/2 cup Grated Parmesan Cheese
- 1 cup Mozzarella Cheese

A classic made easy indeed! Being Italian, I’m a chicken parm snob for sure! I use zucchini or squash noodles with mine as of late to cut down on my carbs.

Looks absolutely amazing. Also, I love that you included angel hair as an option — Angel Hair is overlooked all the time!! I love using it instead of spaghetti…I think it lets the flavor of the other foods come out as it’s not so demanding in it’s wheatiness…if that’s a word.
I’m actually vegetarian but I’m always looking at regular recipes and substituting vegetarian option for the meat. And I really like simple and this is it!

This really does look so good for family dining at home and great for filling up kids in particular. Looking forward to combining Chicken Parm with pasta as I’m sure it will be a hit in this house.
You hit me right where it hurts with this recipe! I have a weakness for Chicken Parm so much so that my family laughs at me when I order it out at an Italian Restaurant. We used to fry our cutlets but have taken to baking them now. Top it with a sprig of basil and you’re good to go. Will definitely be using this recipe.
I haven’t had chicken parm for ages! This sounds super easy. You could even serve the chicken and sauce over spaghetti squash to cut down on the carbs a little.
