This easy deviled eggs recipe is a twist on a classic Southern deviled eggs recipe. Relish is a must for a Southern deviled egg, so I’ve added dill pickle which pairs beautifully with the creamy egg yolk filling.
I usually cook a dozen eggs at a time, which will give you 24 portions of deviled egg. However, this recipe can be easily doubled or tripled if you are feeding a crowd of hungry diners.
Recipe ingredients
- EGGS: boil and peel a dozen eggs, which once halved will give you 24 portions. I use free range eggs as the yolks are vibrant yellow in color.
- RELISH: I like to flavor the egg filling with dill relish which adds a lovely savory, herb flavor.
- MAYONNAISE: you can use any variety of mayonnaise in the filling, low fat mayo will work well here too.
- PIMENTO: a tablespoon of finely diced pimento adds great flavor the filling.
- SEASONING: I season the egg yolk filling with onion powder, garlic powder and celery salt.
- MUSTARD: I’ve used Dijon mustard in the filling, but you could add wholegrain mustard or yellow mustard if you want a bit of heat.
- GARNISH: garnish the eggs with a pinch of paprika and black pepper which is optional.
How to make deviled eggs
Slice the boiled eggs in half.
Remove the yolks and place in a bowl.
Smash the egg yolks with a fork.
Add the dill relish, mayonnaise, pimento, onion powder, celery salt, garlic powder and mustard to the egg yolks.
Stir into the egg yolks until well blended.
Transfer the mixture to a piping bag with an open tip.
Squeeze the egg yolk mixture into the hole of each egg white.
Garnish with paprika and black pepper, if desired.
Refrigerate until ready to serve.
Flavor variations
- If you don’t have mayonnaise, Miracle Whip or thick Greek yogurt is a great substitute.
- I’ve used dill relish, but you can flavor the egg yolk mixture with any flavor of relish.
- Some freshly chopped herbs like dill or parsley can be stirred through the egg yolks.
- Add a touch of chili heat to the eggs, stirring some finely chopped red chili or jalapeno pepper into the mix. A pinch of red pepper flakes would work well too.
