Copycat Taco Bell Enchirito

The Taco Bell Copycat Enchirito is a delicious copycat recipe based on the famous original version. It’s filled with taco meat, refried beans, and white onions, wrapped in a soft tortilla and topped with red enchilada sauce and shredded cheddar cheese. There’s no need to go out for fast food with this easy recipe.

The copycat version of this dish is even better than the original Taco Bell Enchirito. The best part is that you get to make them from the comfort of your home whenever you’d like, with no waiting for them to come back to the Taco Bell menu. You can even make variations based on what you like best. Make an entire casserole dish filled with these burritos, smother them with red sauce, and serve them for an easy weeknight dinner.

In a small bowl, combine the flour, chili powder, salt, minced onion, paprika, onion powder, and garlic powder. Set aside.

Add ground beef to a frying pan, breaking apart the meat as it cooks, cook until ground beef is fully cooked and brown.

Drain ground beef and add the seasoning mix to the pan along with the water.

Mix well with a spatula. Heat for 3 to 5 minutes, or until the seasoning mix and water have turned into a sauce.

Microwave the refried beans for 2 minutes on high.

Warm the tortillas in the microwave for 1 minute on high.

Spoon about 3 tablespoons of refried beans down the center of each tortilla.

Then add about 3 tablespoons of beef on top of the beans.

Next add a small amount of minced onions.

Fold the sides of the tortilla over the meat mixture and roll into a burrito, seam side down.

Spoon about two tablespoons of enchilada sauce over the top of the tortilla.

Then sprinkle with the shredded cheddar cheese.

Heat up the dish for 2 minutes in the microwave, until the cheese on top begins to melt.

Freeze: Freeze this dish without the sauce on top, if possible. Wrap it in plastic wrap and put it in a bag in the freezer for up to three months. Pour some freshly made enchilada sauce over the top

Reheat: When you’re ready to eat the Enchirito, remove it from the freezer and put it in the refrigerator overnight until it thaws. Heat it up in the microwave in 30-second increments until it’s warm all the way through.

  • 1/4 cup all-purpose flour
