Cherry Pie Bars have all the flavor of a Homemade Cherry Pie in an easier to make bar form. They are simple to make, very tasty and quickly slice up so you can serve with a scoop of vanilla ice cream while they’re still hot! Prefer another fruit flavor? No Problem! You can use any flavor pie filling!
Cherry Pie Bars
My family loves eating Cherry Desserts, and these Cherry Pie Bars taste just like Homemade Cherry Pie, only they’re easier to make in bar form! These Cherry Pie Bars are deliciously full of cherry flavor, soft, and perfectly topped with an amazing simple Homemade Cream Cheese glaze!
You can make Cherry Pie Bars with Cream Cheese Glaze with canned Cherry Pie Filling, Frozen Cherries (that have been thawed), or fresh cherries. However, if you use Fresh Cherries make sure you REMOVE THE PIT first! I love to buy fresh cherries at the farmer’s market, so a cherry pitter is a must have kitchen tool!
How to make Cherry Pie Bars:
Preheat oven to 350 degrees and prepare an 8×8 baking pan by greasing with nonstick cooking spray.
In a medium bowl, combine the flour and salt.
Set aside.
Beat the butter and sugar together until light and fluffy.
Add the eggs and vanilla extract and beat to combine. (You can also add almond extract in the same amount as vanilla extract for extra flavor, if you’d like).
Pour in the dry ingredients and mix until well combined.
Spread two-thirds of the batter over the bottom of the prepared pan.
Use your fingers to press the dough into the pan, making sure the dough is spread evenly.
Top the crust with the cherry pie filling.
Spoon the remaining crust dough over the top of the pie filling.
Bake in the preheated oven for 30 to 35 minutes, until the top crust is golden brown and the filling is bubbling.
While the bars are cooling, make the cream cheese glaze by beating together the cream cheese, powdered sugar, vanilla extract, and two tablespoons of milk until smooth.
Add more milk if needed.
When the bars are cooled completely, drizzle the glaze over the top and cut into nine even bars.

- Preheat the oven.
- Grease the pan first to prevent sticking and/or use parchment paper.
- Use room temperature butter, cream cheese, and eggs.
- Be sure you carefully measure all the ingredients precisely.

How do you store leftover Cherry Pie Bars?
Allow Cherry Pie Bars to cool. Cut into slices and store in an airtight container lined with paper towels to absorb excess moisture, for up to 3 days.
Cherry Pie Bars can also be stored in an airtight freezer bag un the freezer for up to one month. Be sure to CLEARLY LABEL the freezer bag with contents and date before placing in the freezer.
