In our home we love Cheesecake and we love Brownies, so I decided to combine the two and created these Strawberry Cheesecake Brownie Cups. They can be made in minutes using a pack of brownie mix, making this a delicious treat any day of the week!
Strawberry Cheesecake Brownie Cups
This recipe for Strawberry Cheesecake Cups with a brownie base, requires only four ingredients (plus the eggs, oil, and water you need for the brownie mix).
These delicious Brownie cups with filling are so easy to make. It takes about 32-35 minutes total, so it’s fast enough to make and enjoy on a weeknight.
My Brownie Cups with Cream Cheese filling are also a BIG hit at potlucks and bake sales, people often ask me for the recipe, and can’t believe how simple it is.
If you prefer your cheesecake with a different fruit, such as cherries, raspberries, blueberries, etc. just swap those for the strawberries.
For a patriotic treat, for a Memorial Day Dessert, 4th of July Dessert, or Veterans Day Dessert, you could make Red (Strawberry or Cherry) Cheesecake, White (Plain Cheesecake with no fruit), and Blue (Blueberry) Cheesecakes!
How to make Strawberry Cheesecake Brownie Cups:
- Preheat the oven to 350 degrees F.
- Mix up the brownie ingredients as stated on the box.
- Spray cooking spray into cups of a cupcake pan.
- Fill the cups 2/3 of the way full with brownie batter.
- Bake for 22-25 minutes or until a toothpick inserted into the center of one of the cups comes out clean.
- Immediately after removing the pan from the oven, spray the bottom of a small glass with cooking spray and use it to press down the center of each brownie to make the cups.
- Allow the brownies to cool completely before trying to remove them from the pan.
- While the brownies are cooling, make the strawberry cream cheese.
- Roughly chop 6-7 strawberries and place in a food processor.
- Pulse until the strawberries have broken down into a puree.
- Mix together cream cheese and powdered sugar using the paddle attachment of a stand mixer.
- As the mixer is on low, add in strawberry puree one teaspoon at a time until desired consistency and flavor is reached.
- Place the frosting in a piping bag with a frosting tip.
- Pipe the frosting onto each brownie cup and garnish with a fresh strawberry and place into refrigerator until ready to serve.
Strawberry Cheesecake Brownie Cups Ingredients:
- BROWNIE MIX: I use 1 box of brownie mix to make the brownie base. Check the instructions on the packaging of your particular brand of brownie mix, as it will give you additional ingredients to mix through and the required quantities (eg eggs, butter, etc), which may vary from brand to brand.
- CHEESE: I use a 1 8 oz. block of cream cheese for the cheesecake filling.
- SUGAR: Use confectionery sugar as it is perfect for beating with the cream cheese, forming a smooth cheesecake consistency.
- STRAWBERRIES: I use enough fresh strawberries for both the puree and to garnish the brownie cups.
Flavor variations & substitutions:
- I’ve used strawberries, but you can swap in other fruits like cherries, raspberries, blueberries, peach or mango.
- For a plan cheesecake filling, swap the strawberry puree for a teaspoon of vanilla extract.
- Filling the brownie cups with a mousse filling instead of cheesecake. Try raspberry, vanilla, lemon, white chocolate or milk chocolate mousse.
- I’ve decorated each cup with a fresh strawberry, but you could also decorate with sprinkles, edible glitter, white, milk or dark chocolate chips.
Recipe hints & tips:
- Take the cream cheese out of the refrigerator 30 minutes before you plan to bake and allow it to come to room temperature. This will make it easier to beat into a smooth consistency for the strawberry cheesecake filling.
- As the strawberry cheesecake contains creamy cheese, store the Strawberry Cheesecake Brownie Cups in the refrigerator until you are ready to serve.
- This recipe can be easily doubled up if you are serving a crowd.
FAQs
As my brownie cups have a strawberry cheesecake they need to stored in the refrigerator. Place in an airtight container and they will store for 3-4 days.
A brownie cup, is a brownie that has been cooked in a muffin tray and then flattened with the base of a small glass to compress the mixture and form the brownie into a cup shape. Once cooled the cup shape can be filled with other ingredients, like my strawberry cheesecake mixture.
