This simple Mexican chicken marinade recipe is made by combining olive oil and fresh lime juice with garlic, cilantro and a variety of ground spices. It adds great depth of flavor when used to marinate chicken.

Ingredients

  • 4 chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 2 cloves garlic minced
  • 1/4 cup cilantro chopped
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • salt and pepper

Instructions

  1. Mix together the oil, lime juice, garlic, cilantro, chili powder, dried oregano, cumin, and paprika.

  2. Place the chicken in a large bag and add the marinade. Chill for at least one hour before cooking the chicken.
