It occurred to me yesterday that I have completely forgotten to share with you where we are in our weekly Seafood Challenge Meals. If you recall from Week 1: What Toppings do You Prefer on a Fish Sandwich, this is part of a promotion on the Gorton’s Seafood Website and Facebook page. This is NOT a sponsored or endorsed post, but I am participating each day and uploading pictures in addition to entering to win. I thought some of you might be going meatless on Friday’s throughout Lent, eating Fish on Friday, etc and be interested in entering too. I always say if I can’t be the winner, I’d love for it to be someone I *know* 🙂 Not to mention, eating seafood twice a week is a doctor’s recommendation for some members of my house – not me, I am of course, allergic to oh so many things, I eat Chicken when I feed the guys fish.
So, now I’ll play catch up, and share with you some of the meals we’ve had while I have been participating. Last week, I served the Skillet Crisp Tilapia featured above, with Rice Pilaf and Cole Slaw.
The week before, I served Shrimp Scampi with Broccoli and Linguine, which I’ve previously featured on Practical Frugality. This one is a favorite, and they request it at least twice a month. It’s quick and easy to make, so I am more than happy to serve it that often 🙂
The week prior, Fish Sticks was the feature, which worked out really well since it was a very busy week. I baked some Fish Sticks and French Fries and called it a night.
This week’s food item is Gorton’s Simply Bake. I’ve picked up some Simply Bake Tilapia with Signature Seasoning. The guys have requested the Rice Pilaf as a side again, and I’ll make some Macaroni Salad as well. I’ll try to remember to add the picture here tomorrow 🙂
